Swede Invitation

Medium-sized, globe-shaped variety with purple skins and a mild, sweet flavoured yellow flesh. Swede is short for Swedish Turnip and it originates in Scandinavia where it’s roasted, baked, boiled, mashed, pureed and used as a flavour enhancer in soups, or thinly julienned in a salad.

Where
In a well-prepared seed bed. Performs best in rich, deeply-dug soil.
How Sow
Sow thinly in rows 45cm (18in) apart. Cover lightly with 10mm (½in) of fine soil. Firm gently and keep moist. Seedlings appear in 14-21 days.
Care
When large enough thin to 25cm (10in) apart. Keep moist and weed free. Harvest: 12-16 weeks from sowing.

Swede, Chicken & Sausage Bake

Ingredients

  • 3 swedes, peeled, roughly chopped
  • 3 sausages, roughly chopped
  • 4 chicken drumsticks
  • 1 onion, cut into thin wedges
  • 3 tomatoes, chopped
  • 2 tbsp olive oil
  • 1 cup white wine
  • 2 tsp sugar
  • Thyme sprigs

Instructions

  1. Preheat oven to 180° C.
  2. Panfry the chicken drumsticks in oil until golden on all sides, season and set aside. Heat another batch of oil in the pan, and add swede, onion and sausages. Cook stirring often, for a few minutes or until golden.
  3. Combine all ingredients in an oven dish, cover with a lid or foil and place in the oven. Bake for 25 minutes until the swede is tender. Uncover and cook for a further 5 minutes until golden.
