An unbeatable heirloom variety for early crops of thick, tasty stems that are ‘self blanching’ and full of flavour. Of all the old French celery varieties, this is by far the most decorative, the easiest to grow, and the least bothered by aphids.

When
Spring through Autumn.
Where
In trays of seed-raising mix or direct in final growing position.
How Sow
Sow seed 5 mm (¼in) deep, firm down gently and keep moist. Seedlings appear 7-14 days.
Care
Transfer to final growing position when sturdy enough, spacing plants 25cm (10in) apart. Water and fertilise regularly. Harvest: 12-14 weeks from sowing.

Celery and Apple Salad

Ingredients

  • 1 fresh apple
  • ¼ cup raw walnuts
  • ½ cup grapes
  • 2 stalks celery
  • Dill or chervil leaves, to serve
  • Dressing:
  • 1 tablespoon white-wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • Coarse salt and ground pepper

Instructions

  1. Wisk the dressing ingredients together until combined.
  2. Slice the celery and apple into thin rounds. Halve the grapes and lightly crumble the walnuts. Toss lightly with the dressing, top with dill or chervil leaves and serve.
